Grass Fed Lamb Shank w/Portobellos on Pasta
A decades long fave of a Gardens'-falling-off-the-bone tender braised lamb shank, with a succulent portobellos and diced fresh romas on a bed of whole wheat organic spaghetini. We enjoy ours with Kotsifali! We can also suggest on tap Mirror Pond Ale!

Stuffed Wild-caught Squid
Calamari, a wild-caught, more tender relative of squid stuffed with rice, onions, chopped calamari tentacles, herbs and seasonings on braised onions in light tomato and wine sauce. Looks like cannelloni tubes, but the flavorings of organic orange peel, cayenne, thyme, and mint make a rich, complex dish--one of the most requested. An easy pairing with our Skouras Agiorgitiko red $32/bottle or, if you want the flavors to pop, ask for the Chrisohoou, $40/bottle: smokey, deep, complex with a bright cassis finish that zaps the orange and cayenne in this dish.

From Tender Care and Hidden Stream Farms--pork shoulder, jowl and loin sliced, dry rubbed, stacked and vertically broiled. They should have it this good in GREECE! Served on an open pita w/Tzatziki and a pile of fries OR wrapped as a sandwich!
Don't want to commit to a full entree--try the sharable appetizer saganaki--sliced into a saganaki pan with quarters of pita, onions, and sides of tzatziki and yogurt mustard sauce.
There's not much else to decide other than a Summit Winter Ale on tap, a Lafkioti Rodamo or the pale, dry rose, Kendros by Lyrarakis!

Our vegetarian version of possibly the most famous after gyro Greek dish--layers of roasted eggplant (3) covered with a heavier garlic and wine red sauce (2 layers) sprinkled with chunks of feta cheese (pasteurized) and topped with a creamy béchamel sauce--baked to a golden brown.
