It’s back! The quintessential caviar dip! When we attempted to source it for our daughter’s wedding, we searched coast to coast to no avail! Finally, we procured in Athens and both Lazaros and Anna, with the Custom Clerk’s blessing, carried buckets across the border. Wild-Caught North Atlantic cod roe whipped with red onions, freshly squeezed lemon juice and EVO and corn oil for a light, fluffy spread best with a good retsina (Lafkioti) or a dry rose! More Omega-3's than any other seafood we eat!

The soup that we didn’t know was Greek until we found it in the definitive cookbook! Yummy and simple as can be.

One Saturday, newly opened, we arrived early only to realize that the “house-simmered stock” had not been prepared. Devastated we wracked our heads and came up with “Fava Style Soup”. Only because Fava is prepared with golden split peas and we grew up eating Split Pea Soup we made the leap. Two months later we found the Fava soup recipe in our favorite cookbook: the Greek chef grew up eating it. We still get more calls for the availability of that soup than any other. It’s Anna’s favorite winter breakfast.

After 5pm! Marinated in Petimezi*, Greek EVO oil, sherry vinegar, garlic, mint and etc, these tender lamb chops from Hidden Stream Farm are flame grilled to order, drizzled with more Petimezi sauce, sprinkled with a chiffonade of basil and mint, served with a side of mustard and mint yogurt. All-natural lamb shanks braised in extra virgin olive oil and white wine, simmered with organic, globe (or baby) artichoke hearts (yes, we shuck the leaves for you!) sweet carrots, scallions and fresh dill. This is Anna’s absolute favorite, a dish that she judges Greek restaurants by: if they attempt to make the dish, it's a decent diner, if it’s good, she'll recommend it!

We still recommend Boutari’s Naoussa with its “dark tart” berry,“Xinomavro” as the “go-to” wine for anything avgolemono: it’s full, yet balanced tanins velvetize the acid of the lemon sauce.

BRAISED GRASS-FED LAMB SHANKS W/ORGANIC ARTICHOKES IN AVGOLEMONO (Traditional Lemon Sauce)

All-natural lamb shanks braised in extra virgin olive oil and white wine, simmered with organic, globe (or baby) artichoke hearts (yes, we shuck the leaves for you!) sweet carrots, scallions and fresh dill. This is Anna’s absolute favorite, a dish that she judges Greek restaurants by: if they attempt to make the dish, it's a decent diner, if it’s good, she'll recommend it!

We still recommend Boutari’s Naoussa with its “dark tart” berry,“Xinomavro” as the “go-to” wine for anything avgolemono: it’s full, yet balanced tanins velvetize the acid of the lemon sauce.

Fire Grilled Lamb Riblets

After 5pm! Marinated in Petimezi*, Greek EVO oil, sherry vinegar, garlic, mint and etc, these tender lamb chops from Hidden Stream Farm are flame grilled to order, drizzled with more Petimezi sauce, sprinkled with a chiffonade of basil and mint, served with a side of mustard and mint yogurt. We paired ours with Roditis, Nemea and Oenodea for a perfect light and tasty meal!

The soup that we didn’t know was Greek until we found it in the definitive cookbook! Yummy and simple as can be.

One Saturday, newly opened, we arrived early only to realize that the “house-simmered stock” had not been prepared. Devastated we wracked our heads and came up with “Fava Style Soup”. Only because Fava is prepared with golden split peas and we grew up eating Split Pea Soup we made the leap. Two months later we found the Fava soup recipe in our favorite cookbook: the Greek chef grew up eating it. We still get more calls for the availability of that soup than any other. It’s Anna’s favorite winter breakfast.
